LILY'S SIGNATURE VANILLA
BUTTERCREAM FROSTING
 
1 cup sugar
1/3 cup water
6 egg yolks, lightly beaten
1 1/2 teaspoons vanilla extract
1 1/2 cups butter, softened
6 tablespoons confectioners' sugar

In a heavy saucepan, bring sugar and water to a boil; cook over medium-high heat until sugar is dissolved. Remove from the heat.

Add a small amount of hot mixture to egg yolks; return all to the pan, stirring constantly. Cook 2 minutes longer or until mixture thickens, stirring constantly. Remove from the heat; stir in vanilla. Cool to room temperature.

In a mixing bowl with the whisk attachment, cream butter until fluffy, about 5 minutes. Gradually beat in cooked sugar mixture. Beat in confectioners' sugar until fluffy, about 5 minutes.

If necessary, refrigerate until frosting reaches spreading consistency.

Store in the refrigerator.

I was a little skeptical about this recipe as my original buttercream frosting called for egg whites not egg yolks and no icing sugar, but seeing as I'm having trouble finding the ingredients I need, I tried this and WOW it's fantastic will definitely be using this one. Not sweet at all. Thanks for the recipe :-)

I thought this frosting smelled a little too egg-like. I also had a hard time keeping the egg from scrambling even though I added some of the sugar mixture to the eggs prior to adding all of it.

Loved the flavor! I should have tested it's durability before I used it for a big cake I made, however. I made 4 tiered cake and the frosting melted all down the sides. I had to keep it in the fridge until time to cut it. It wasn't easy to decorate with at all. Everyone loved the flavor though. I will use it again for a small cake that I don't need to decorate. Thanks!
