CHEDDAR BAKED HADDOCK 
2 lb. haddock fillets (1/2 lb. per person)
Salt and pepper to taste
2 c. (or less) chopped onion
3 tbsp. butter
1 c. bread crumbs
1/2 c. grated sharp cheddar cheese
1/2 c. milk

Season haddock with salt and pepper. Place in shallow, greased baking dish. Saute onion in butter adding bread crumbs and cheese. Spread mixture over fish, pour milk around fish and bake in 400 degree oven about 25 minutes. May broil a few minutes for crust.
