APPLESAUCE-OAT MUFFINS
(CHOLESTEROL FREE)
 
2 c. Cheerios, crushed
1 1/4 c. all-purpose flour
1/3 c. packed brown sugar
1 tsp. ground cinnamon
1 tsp. baking powder
3/4 tsp. baking soda
1 c. applesauce
1/3 c. skim milk
1/2 c. raisins
3 tbsp. oil
1 egg white, beaten

Heat oven to 400 degrees. Grease or spray oil bottoms only, 12 muffin cups. Mix cereal, flour, brown sugar, cinnamon, baking powder, baking soda in large bowl. Stir in remaining ingredients until just moistened. Divide batter evenly in muffin cups. Bake 18-22 minutes until brown.
