APPLESAUCE OAT MUFFINS 
1 1/2 c. Quaker oats (quick or old fashioned)
1 1/4 c. all purpose flour
1/2 c. firmly packed brown sugar
2 tsp. cinnamon
1 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt; optional
1 c. unsweetened applesauce
1/4 c. vegetable oil
2 egg whites
1 tsp. vanilla

Heat oven to 375 degrees. Line 12 medium muffin cups. Combine oats, flour, brown sugar, cinnamon, baking powder, baking soda, and salt. Add combined applesauce, oil, egg whites, and vanilla. Mix just until dry ingredients are moistened. Fill muffin cups almost full. Bake 18-22 minutes or until golden brown.

VARIATIONS: Banana nut muffins - omit applesauce sauce and cinnamon; add 2 medium bananas and 1 cup of broken walnuts. Bananas must be very ripe!
