APPLESAUCE MUFFINS 
1 c. oat bran
1/2 c. whole wheat flour
1/2 c. bran
1 1/2 tbsp. flour
2 tsp. baking powder
1/2 tsp. ground cinnamon
2 egg whites
1/3 c. applesauce
1 c. skim milk
1/2 c. blueberries

In a large bowl combine oat bran, wheat flour, bran, baking powder and cinnamon; set aside. In another bowl combine egg whites and applesauce, whisk in the skim milk and pour into flour mixture. Mix until moistened. Fold in the blueberries. Spray muffin pan with no stick spray. Spoon batter into 12 muffin cups. Bake at 425 degrees for 15 to 18 minutes until browned. 1 muffin has 65 calories.
