ITALIAN CREAM CAKE | |
2 c. sugar 1/2 c. Crisco 1 stick butter 5 eggs, separated 1 c. buttermilk 1 tsp. baking soda 2 c. flour 1 sm. can coconut 1 tsp. vanilla 1 c. pecans Cream sugar, Crisco and butter. Separate eggs and add yolks, 1 at a time. Add soda to buttermilk. Add buttermilk and flour alternately. Add coconut, vanilla and chopped pecans. Fold in beaten egg whites. Bake at 325 degrees for 25 or 30 minutes. Makes 3 layers. ICING: 1 (8 oz.) cream cheese 1 stick butter 1 tsp. vanilla 1 box powdered sugar 1 c. chopped pecans Cream together cheese, butter and vanilla. Add powdered sugar. |
