ITALIAN CREAM CAKE | |
1 stick butter 1/2 c. shortening 2 c. sugar 5 egg yolks 2 c. all purpose flour 1 tsp. baking soda 1 c. buttermilk 1 tsp. vanilla 1 (4 oz.) can flaked coconut 1 c. chopped nuts (pecans) 5 egg whites, beaten stiff Cream butter and shortening; add sugar. Beat until smooth. Add egg yolks; beat well. Combine flour and soda and add to creamed mixture alternately with buttermilk. Stir in vanilla. Add coconut and nuts. Fold in egg whites. Pour into 3 (8") pans, greased and lined with waxed paper and bake at 350 degrees for 25 minutes. ICING: 1 (8 oz.) pkg. cream cheese, softened 1/2 stick butter 1 box powdered sugar 1 tsp. vanilla Chopped nuts Beat cheese and butter until smooth. Add sugar and mix well. Add vanilla and beat until blended. Spread between layers and on top and sides of layers. Sprinkle top with nuts. |
