NAVAJO LASAGNA | |
2 or 3 zucchini (sliced lengthwise) 1 doz. corn tortillas 1 1/2 lbs. hamburger 1 med. onion, chopped 1 jar Prego spaghetti sauce (28 oz.) 1 sm. can corn, drained 1 sm. can kidney beans, rinsed and drained 1/2 bell pepper, chopped Black olives, sliced, about 8 2 med. ripe tomatoes, chopped or sm. can tomatoes 1 1/2 c. cottage cheese 1/2 c. Parmesan cheese 1 egg 2 c. shredded Mozzarella cheese Cook hamburger and onion. Add Prego sauce, tomatoes, corn, kidney beans, bell pepper and olives. Simmer 10 minutes. Line bottom of 9x13x2 pan with 4 or 5 corn tortillas. Slice zucchini lengthwise and layer on top of tortillas. Save half of zucchini for next layer. Mix cottage cheese, Parmesan cheese and egg. Use half on top of tortilla and zucchini. Spoon half of meat sauce over cottage layer. Repeat layers. Bake at 350 degrees for one hour, top with Mozzarella cheese and bake 30 minutes more. Let set 10 or 15 minutes and serve. |
