ITALIAN CREAM CAKE 
2 c. sugar
1 stick butter
1/2 c. Crisco
2 c. flour
1 c. buttermilk
5 eggs, separated
1 c. pecans
2 c. coconut
1 tsp. baking soda
1 tsp. vanilla

ICING:

1 lg. pkg. cream cheese
1/2 stick butter
1 tsp. vanilla
1 box powdered sugar

Beat egg whites and set aside. Cream butter, Crisco and sugar. Add flour alternating with buttermilk. Add soda and vanilla, egg yolks, coconut and pecans. Fold in beaten egg whites. Bake in 3 (9") layer pans at 350 degrees for 40 minutes.

Have cheese and butter at room temperature. Blend together and add vanilla and powdered sugar. Add pecans if you want.
