PAUL'S AFRICAN BEANS 
1 lb. mixed dry beans
1/2 lb. salt pork
1 lg. onion
1 green pepper
1/2 red pepper
3 cloves garlic
2 tbsp. prepared mustard
1 1/2 (6 oz.) cans tomato paste
1/3 stick butter
4 tbsp. olive oil
2 to 3 bay leaves
Oregano (to taste)
Cayenne pepper (to taste)
Durkee Adobo seasoning (to taste)

Rinse beans and soak overnight with enough water to cover. Add water as necessary to keep covered as beans expand. Do not drain. Bring to slow boil and simmer. Add bay leaves, butter and olive oil. While beans cook, cut salt pork into small cubes and heat in saute pan. When pork is near done (do not drain), add minced onions and garlic. Cook until onions are tender. Add chopped peppers, mustard and tomato paste. Heat until warm, then add this to the beans. Season to taste. Serve with cooked brown rice, corn bread and sliced avocado.
