BROCCOLI AND TOMATO QUICHE 
1 pt. heavy cream
2 med. eggs
1/2 c. steamed, chopped broccoli
1/2 c. diced tomato (2 med.)
2 c. grated cheese
1 - 9 inch pie crust
2 tbsp. Parmesan cheese
Salt and pepper, optional

Preheat oven to 350 degree oven. Blend, slightly beaten eggs with cream. Sprinkle tomato and broccoli in bottom of pie crust. Put with grated cheese on top of broccoli mixture. Sprinkle with Parmesan cheese. Pour cream/egg mixture last. Bake 1 hour. Can be doubled.
