CORN OYSTERS 
1 c. corn (fresh, frozen or canned, drained)
2 eggs, slightly beaten
1/3 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. corn oil for frying

Mix corn with eggs and sifted dry ingredients. Heat oil in 10 inch frying pan. Drop tablespoonsful of batter into hot oil. Fry over medium to low heat. When brown on bottom, turn and brown on other side. Makes 10 corn oysters 2 1/2 inches in diameter.
