MADDA'S CABBAGE SUPREME | |
1 head cabbage (med.) 4 med. red onions 7 med. potatoes 8 carrots 2 lg. green peppers 1/2 tsp. salt 1/2 tsp. curry powder 1 tsp. ground turmeric 1/4 tsp. coriander 1 tsp. garlic powder 1. Chop onions and cook with enough water to prevent sticking, until they're tender and slightly browned. 2. Add spices and oil, cook for 10 minutes. 3. Peel carrots, cut them lengthwise, and remove the core. Each half should be cut into 3 pieces, each in 3 or 4 inch lengths. 4. Add carrots to onion and spice mixture; stir, cover and cook for 5 minutes. 5. Peel potatoes and cut in thick slabs and again in fourths. Coarsely chop green peppers and cabbage. 6. Add remaining vegetables, stir, cover and cook for 20 minutes until they're tender, but not mushy. MICROWAVE/STEAMER DIRECTIONS: 1. Follow steps 1 - 3 using stovetop. 2. Microwave or steam carrots, green peppers, cabbage and potatoes in separate batches until each is about 50% cooked. 3. Stir vegetables into onion and spice mixture, simmer up to 15 or 20 minutes or until vegetables or tender, but not mushy. Serves 6. |
