BOATER'S BREAKFAST 
1/4 c. butter
1 med. onion, diced
3 med. potatoes, cooked & cubed or 1 (16 oz.) can cubed potatoes
1 (12 oz.) can chopped ham, cubed or other cubed meat
6 eggs, beaten
1/2 tsp. salt
1/2 c. sharp cheese, shredded

Saute onion in butter. Add potatoes and ham. Brown slightly. Pour eggs and salt over all. Cook and stir gently. Sprinkle with cheese. Serves 4.
