TORTILLA FOR BREAKFAST 
1 pkg. tortilla, corn or flour
1 lg. onion
1 lg. green pepper
2 tsp. butter
6 eggs
Salt and pepper
1/2 c. sour cream
1 lb. hamburger meat of choice, cooked
1/2 c. salsa

Heat in large fry pan butter and chopped onion, hamburger and green pepper. Stir fry until tender. Scramble eggs and pour over onion mix and cook until half cooked. Spoon into tortilla shells and roll. Bake at 350 degrees for 25 minutes. Add sour cream and salsa, bake 5 to 10 minutes longer. Serves 6. Good with Spoon Bread.

Try this for something different than just scrambled eggs and sausage. The corn tortillas were a bit delicate to handle, but heated tortillas were less likely to crack apart. The store bought tortillas did better than the fresh tortillas. I used half a pound of sausage with the 6 eggs and added spices. Also added a little shredded cheese to the mix to bind the mix. They baked well and came out great. Everyone loved them.
