SCALLOPED CORN 
1/4 c. onion, chopped fine
1/4 c. green bell pepper, chopped fine
2 tbsp. butter
2 tbsp. flour
1 tsp. salt
Dash of pepper
1/4 tsp. paprika
1/4 tsp. dry mustard
3/4 c. milk
1 (#303) whole kernel corn, or cream-style, or 2 c. fresh/frozen
1 egg, slightly beaten
Bread crumbs sauteed in a little butter until browned

Saute onion and green pepper in the butter until soft. Blend in flour, salt, pepper, paprika and dry mustard and continue cooking until bubbly. Remove from heat and gradually add the milk, stirring constantly. Return to heat and bring to a boil, stirring constantly. Remove from heat and add corn and the beaten egg. Pour into a 1 quart greased baking dish. Top with bread crumbs. Bake in preheated 350 degree oven for 20-30 minutes. Makes 4 generous servings.
