CHOCOLATE CHIP-RAISIN COOKIES 
1 c. solid shortening
1/2 c. butter
1 1/3 c. granulated sugar
1 c. packed brown sugar
4 eggs
1 tbsp. vanilla
1 tsp. lemon juice
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
1/2 c. rolled oats
3 c. flour
18 oz. semi-sweet chocolate chips
1 c. chopped walnuts
1 1/2 c. raisins

In a large bowl, beat shortening, butter and sugars at high speed (about 5 minutes). Add eggs beating well. Beat in vanilla and lemon juice.

In a separate bowl, mix together baking soda, salt, cinnamon, oats and flour. Beat into creamed mixture until well combined. Add chocolate chips, nuts and raisins.

For each cookie, drop a rounded tablespoon of dough onto a cookie sheet. Bake at 350 degrees for 12 minutes or until golden brown.
