FAMOUS JOE'S CHOCOLATE
CHIP-RAISIN COOKIES
 
1/2 c. butter
1/2 c. shortening
3/4 c. granulated sugar
3/4 c. brown sugar, packed
1 tsp. vanilla
1 tsp. water
2 eggs
2 1/4 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
2 c. raisins
1 pkg. (12 oz.) semi sweet chips
1 c. chopped nuts (if desired)

Preheat oven to 375 degrees. With a wire whisk attachment, cream butter, shortening, sugars, vanilla and eggs until frothy and blended. Stir together flour, soda and salt, then BY HAND, stir into whipped mixture. Stir in raisins and chips (and nuts, if desired). Do not overstir or overbeat.

Using tablespoons, spoon dough on to ungreased cookie sheets. Allow 2 inches between for spreading. Bake in the center of a top rack for 8 minutes or until nicely golden brown, depending how crisp and well done you desire. Allow 2 to 3 minutes to firm on sheet before removing to cool. Makes 3 dozen medium sized cookies.
