QUICK BEEF STIR-FRY 
1/2 to 3/4 lb. beef cube steak or round steak
1/4 c. olive oil
2 clove garlic, minced or pressed
1 red bell pepper, sliced
Tortillas
2 med. carrots, cut julienne
1/2 head cauliflower, cut into florets
1/2 lb. fresh mushrooms, sliced
1 broccoli, cut into florets

Cut steaks into 1/3 inch strips. Heat oil and garlic in wok or wide frying pan until garlic is aromatic. Add beef strips. Saute until browned. Remove and keep warm. Add peppers, carrot strips, cauliflower, and broccoli. Saute until tender-crisp, about 5 minutes. Add mushrooms and return meat to the pan. Cook 2 minutes longer or until the meat is heated through. Wrap tortillas in foil and warm over medium heat in a dry frying pan until heated through. Spoon stir fried meat and vegetables into the tortillas and roll up or simply serve the tortillas on the side as a warm bread.
