OKRA-TOMATO CASSEROLE 
6 c. sliced tender okra
3 med. fresh tomatoes, chopped
1/2 c. chopped onion
1/2 c. chopped green pepper
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. dry butter substitute

1. Place layers of okra, tomatoes, onion, green pepper, salt and pepper in non- stick 2 1/2 quart casserole.

2. Repeat layers.

3. Top with dry butter substitute.

4. Bake at 350 degrees for 1 hour. Yield: 8 servings. Each serving 1/2 cup. Each serving may be exchanged for 1 vegetable.
