ITALIAN POTATO TOMATO CASSEROLE | |
4 potatoes 3 med. tomatoes, sliced 1/2 c. grated cheese 1/2 tsp. salt 1/4 tsp. oregano 2 tbsp. butter 1 tbsp. olive oil 1 onion, sliced thin 1/2 c. Provolone cheese, shredded 1/8 tsp. pepper Peel and slice potatoes 1/4" thick. Oil large casserole with olive oil. Arrange potatoes, tomatoes and onions in layers. Sprinkle each layer with the cheeses and other seasonings. Repeat, ending with a layer of potatoes sprinkled with cheese. Dot with butter. Bake at 400 degrees for 50 minutes or until potatoes are tender. 4 to 6 servings. |
