SEAFOOD CASSEROLE 
2 tbsp. olive oil
3 large garlic cloves crushed or minced
1 medium yellow onion chopped
1 medium green pepper diced
2 14 oz. cans diced tomatoes
1 tsp. dried thyme
10 oz. bottled clam juice
2 c. instant rice
1 1/2 c. diced smoked turkey
12-18 jumbo shrimp uncooked and shelled
12 mussels in shell (optional)
1 10 oz. pkg. frozen peas
salt and pepper to taste
2 canned roasted red peppers cut in 5x1 inch strips

In a skillet, heat olive oil. Add garlic, onion and pepper. Sauté until soft.

Mix the above and all the other ingredients in a large casserole dish except the mussels.

Decorate the top of the dish with mussels and canned red peppers.

Bake uncovered in a 375 oven for 30 minutes. Let sit 10 minutes, covered, before serving.
