FESTIVE SEAFOOD CASSEROLE | |
8 oz. pkg. noodles 1 tbsp. butter 1/4 c. each of chopped onion, pepper, mushrooms 1 fresh tomato, sliced or canned sliced tomatoes 2 c. seafood, lobster knuckle meat or shrimp, crabmeat, scallops or canned tuna 1 tbsp. lemon juice 1/2 c. mayonnaise 1 sm. can cream of mushroom soup or 1 cup white sauce 1/2 c. sharp cheddar cheese, shredded Salt & pepper Cook noodles and drain. Melt butter in skillet and saute lightly onion, peppers and mushrooms. In a large bowl combine seafood, sauteed vegetables, tomato, mayonnaise, lemon juice, salt and pepper. Add noodles and soup. Pour into buttered 2 quart casserole. Top with cheese. Bake in 400 degree oven for 20 minutes. |
