FRESH MICROWAVE STRAWBERRY JAM | |
5 c. crushed strawberries, washed and hulled 7 c. sugar 2 tsp. lemon juice 1 pkg. fruit pectin A few drops red food coloring In 4-quart microproof bowl combine fruit and juice with pectin. Cook, covered, on High (maximum power) 10-11 minutes, or until mixture fully boils. Stir once during cooking. Stir in sugar at once. Cook, uncovered, on High (maximum power) 10-12 minutes or until mixture boils hard for at least 1 minute. Skim off any foam with metal spoon. Pour into hot sterilized glasses or jars and seal. Keeps for months in the refrigerator or can be sealed with paraffin to keep on the shelf. (Makes 2 quarts). |
