MICROWAVE PEACH JAM 
4 c. frozen unsweetened sliced peaches
1 (1 3/4 oz.) pkg. powdered fruit pectin
1 tbsp. sugar
1/2 tsp. ascorbic acid
1 tbsp. lemon juice (optional)

Mash peaches; combine with all ingredients in deep 2 quart casserole. Cover. Microwave on High for 2 minutes. Stir; cover; microwave 3-4 minutes or until boils for 1 minute. Remove. Stir 2 minutes. Pour into freezer container. Cover; freeze. Thaw to serve. Store in freezer up to one year; refrigerator, one month.

Since microwave ovens vary in power, you may need to adjust your cooking time.
