SUPERB ZUCCHINI CASSEROLE 
1 lb. zucchini, unpeeled and cubed
1/2 c. onion, diced
4 eggs, beaten
2 c. grated Swiss cheese, divided
1/4 tsp. salt
1/8 tsp. cracked pepper
1/4 tsp. oregano, crushed
1/2 tsp. basil, crushed
1/4 tsp. dry mustard
1/2 tsp. instant chicken bouillon

Preheat oven to 325 degrees. Steam zucchini until tender. Mash but do not puree. Combine with rest of ingredients except 1/2 cup Swiss cheese. Spoon into greased flat 1 1/2 quart baking dish. Top with remaining 1/2 cup cheese and bake approximately 45-50 minutes or until center is set. Can be prepared early in day and chilled until ready to bake.
