ZUCCHINI CASSEROLE 
2 med. onions, sliced thinly
6 tomatoes, sliced
2 med. zucchini, sliced
1 or 2 green peppers, diced
2 pkgs. Swiss cheese

Layer (in greased 9x9-inch baking dish) zucchini (overlapping) and salt, onion rings, tomato slices & diced green peppers. Overlap Swiss cheese--use 1 pkg. and repeat first layer--tuck in any edges of cheese and push gently down.

I cook this on middle rack and if it begins to brown too early in baking cover with foil. A test of doneness is when a fork can be put thru all layers easily. Delish!
