ZUCCHINI CASSEROLE 
3 to 4 med. zucchini, sliced thin (skins on)
1 c. Bisquick
1/2 c. grated Swiss cheese (can use up to 1 full cup)
2 tbsp. chopped parsley
1 tsp. oregano
1/2 tsp. each salt and pepper
1/2 c. chopped onion (which has been sauteed in 1/3 cup vegetable oil)
4 eggs, slightly beaten

Mix all ingredients, adding eggs last. Bake in a shallow, greased baking dish for 25 minutes at 350 degrees. Amounts can be doubled or tripled; can be eaten hot or cold. Serves 4 to 6.
