SUPER-MOIST AND CREAMY MASHED
POTATOES
 
1 lb. potatoes, peeled
1/2 cup good-quality mayonnaise (Hellmann’s or Duke's, etc.)
1 tbsp. milk
salt and black pepper, to taste

Cover potatoes with water in a 2-quart saucepan. Bring to a boil over high heat. Reduce heat to low and simmer 10 minutes or until potatoes are tender; drain. Return potatoes to saucepan; mash.

Stir in mayonnaise and milk. Season with salt and pepper to taste.

NOTE: Add any other additions you would like, such as garlic, shredded cheese, caramelized onions, etc.
