CREAMY BAKED MASHED POTATOES 
1 env. Lipton vegetable recipe soup mix
4 c. hot mashed potatoes
1 c. shredded Cheddar or Swiss cheese (4 oz.)
1/2 c. chopped green onions (optional)
1 egg, slightly beaten
1/8 tsp. pepper

Preheat oven to 375 degrees.

In lightly greased 1 1/2 quart casserole, thoroughly combine all ingredients except 1/4 cup cheese. Bake 40 minutes. Top with remaining cheese and bake an additional 5 minutes or until cheese is melted. Makes about 8 servings. (Do not use salt when preparing hot mashed potatoes.)
