FUDGE CUPCAKES 
2/3 c. brown sugar
1/3 c. milk
2 (1 oz.) sq. unsweetened chocolate
1/3 c. shortening
2/3 c. brown sugar
1 tsp. vanilla
2 eggs
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. milk

Combine 2/3 cup brown sugar; 1/3 cup milk and chocolate in saucepan; heat and stir over low heat until chocolate melts; cool. Stir shortening to soften. Slowly add 2/3 cup brown sugar; cream until light and fluffy. Add vanilla. Add eggs, one at a time, beating well after each egg.

Sift flour with salt and soda, add to shortening mixture alternately with milk; beat well. Add chocolate mixture; mix well. Fill muffin pans 1/2 full. Bake at 375 degrees for 20 minutes. Makes 2 dozen.

Tip: May substitute sugar for brown sugar if you desire. Frost with Butter Frosting or Glossy Chocolate Frosting or Peanut Butter Frosting.
