CHOCOLATE FILLED CUPCAKES 
3/4 c. flour
3/4 c. sugar
1/3 c. cocoa
3/4 tsp. baking soda
3/4 c. buttermilk
1/4 c. shortening
1 egg
1/2 tsp. vanilla
1/3 c. chopped nuts
1/2 tsp. salt

Cream shortening and sugar. Add egg and milk. Add sifted dry ingredients alternately with buttermilk. Fill muffin tins 1/2 full. Spoon 1 tablespoon cheese filling over batter. Sprinkle nuts over filling. Bake at 350 degrees for 30 minutes. Cool. Frost with chocolate frosting.

CHEESE FILLING:

8 oz. softened cream cheese
1/2 c. sugar
1/2 tsp. salt
1 egg
1/2 c. chocolate chips

Mix sugar and cheese thoroughly. Add salt and egg. Stir in chocolate chips. These keep well.
