CREAM CHEESE-FILLED CHOCOLATE
CUPCAKES
 
3 c. flour
2 c. white sugar
1/2 c. cocoa
2 tsp. baking soda
2 c. water
2/3 c. cooking oil
2 tbsp. vinegar
2 tsp. vanilla

Mix above ingredients as for a cake. Fill paper lined cupcake pans about 1/2 full.

FILLING:

8 oz. cream cheese
1 egg
1/3 c. white sugar
Dash of salt
1 c. chocolate bits

Blend above ingredients and drop a heaping teaspoon of filling into each cupcake. Bake at 350 degrees for 15 to 18 minutes.

These are delicious. I put a maraschino cherry in each 1 of them after they were cooked. I took them to a meeting tonight m people that normally would only eat half a cupcake, if that much, were eating 2 and 3 of them. They are very moist and very delicious. They are so very easy to make. I was surprised at the ease of making them.
