EASY APPLE COFFEE CAKE 
BATTER:

1 1/2 c. chopped, peeled apples
2 tbsp. sugar
2 c. biscuit mix
1 egg
3/4 c. milk

TOPPING:

1/3 c. brown sugar
1/2 tsp. cinnamon
1/3 c. biscuit mix
1/4 c. butter
1/2 c. chopped, peeled apples

In a bowl, combine sugar, biscuit mix, egg and milk. Beat for 1 minute. Stir in chopped apples and beat 30 seconds. Spread batter in greased 9-inch baking pan.

Prepare topping by combining brown sugar, cinnamon, biscuit mix and butter with a pastry blender. Stir in chopped apples. Sprinkle mixture over the batter in pan. Bake at 400 degrees for 25 minutes. Serve warm.
