POLISH APPLE SHEET CAKE 
1 1/2 c. sugar
3/4 c. shortening or butter
2 eggs
2 1/2 c. sifted white flour or whole-wheat pastry
1 tsp. baking soda
1 1/4 tsp. cinnamon (divided use)
3/4 tsp. salt
3/4 c. warm coffee
3 c. apples, peeled and diced
1/2 c. chopped walnuts
1/2 c. light brown sugar, packed

Cream sugar and shortening. Add eggs and beat. Combine flour, soda, 3/4 teaspoon cinnamon and salt. Sift into creamed mixture, adding alternately with coffee. Fold in apples and nuts., Pour butter into greased and floured 9 x 13-inch pan. Combine 1/2 teaspoon, cinnamon and brown sugar; sprinkle over the top of the cake before baking.

Bake at 350°F for 45 minutes. Cool and cut into squares and serve.
