BEEF 'N TATER BAKE 
1 1/2 lb. lean ground beef
1 c. soft bread crumbs
1 beaten egg
1/2 c. chopped onion
1/3 c. ketchup
1/2 tsp. salt
1/8 tsp. pepper

Mix all ingredients very well and pat into 8-inch square baking dish. Bake at 350 degrees for 30 minutes. Remove from oven and drain excess fat. Combine 3 cups hot mashed potatoes and 3/4 cup shredded American cheese. Spread this over baked meat. top with 1/4 cup shredded cheese. Bake 20 more minutes.
