DEL MONICO POTATOES 
10 lg. potatoes
1/2 to 3/4 c. American cheese, grated
1 tsp. parsley flakes
1 tsp. onion flakes
1/4 tsp. pepper
1/3 stick butter
1 c. sour cream mixture

Sour cream mixture: 1 (12 oz.) carton sour cream mixed with 1 1/2 cups milk, to make about 3 cups.

Boil 10 large potatoes with jackets on until not quite done. Cool well, put in the refrigerator overnight. Peel potatoes. Grate 4 of them in a large casserole for first layer. Add cheese, parsley, onion, pepper, butter, and part of sour cream mixture.

Grate 3 more potatoes on top of this and repeat the above layer. Grate last 3 potatoes and repeat again. Bake at 350 degrees for 1 hour or freeze. Thaw completely before baking.
