1 egg white and 1 tablespoon water beaten until stiff. Add 1 pound nuts and coat (walnuts, cashews, etc.). Mix 1 cup sugar, 1 teaspoon cinnamon and 1/2 teaspoon salt. Add to nut mixture. Coat thoroughly. Melt 3 tablespoons butter; pour in shallow pan (jelly roll). Add nut mixture. Bake at 275 degrees for 45 minutes. Stirring every 15 minutes.
