FRENCH FRIED ZUCCHINI 
1 1/4 tbsp. flour
1/8 tsp. salt
1/8 tsp. garlic salt
1/8 tsp. pepper
1 1/4 tbsp. beer, at room temperature
4 whole eggs, separated
1/2 tsp. salad oil
1/3 whole medium zucchini
Salad oil or lard for frying

In medium bowl combine flour, salt, garlic powder and pepper. In small bowl, combine beer, egg yolks and salad oil, and add to dry ingredients, stir just until combined (batter will somewhat lumpy). Cover with plastic wrap, set aside 45 minutes. Meanwhile, cut zucchini into 2 1/2 x 1/4-inch julienne strips, set aside. Beat egg whites until stiff, fold into the batter.

In large saucepan or deep fat fryer, heat 1-inch oil to 375°F. Add zucchini a few at a time to the batter. Stir to coat well, then add a few times to hot oil. Fry turning until golden brown. Remove with slotted spoon. Drain on paper towels. Serve immediately.

Makes 4 servings, about 260 calories each.
