FRIED ZUCCHINI | |
desired amount of zucchini 3 large eggs 2 cups Italian breadcrumbs (Progresso or 4C) seasoned salt, to taste (Lawry's) butter I usually peel the skin off the zucchini. This is optional. Slice the zucchini to the desired thickness. Melt a large spoonful of butter in frying pan. Cut enough slices of zucchini to fill up the frying pan Dip them in the egg then roll them in the bread crumbs. If desired, sprinkle with seasoned salt while frying. Flip when bottoms are golden brown. Take out of pan when both sides are brown and zucchini is fork tender. Repeat steps until zucchini is gone. Enjoy! Submitted by: Travis McCormick |
