FAKE N' BAKE "FRIED" ZUCCHINI & CARROT CHIPS | |
This low-fat alternative to fried zucchini disappears as fast as the real deal. All of the flavor, none of the guilt! 1 (1 lb.) bag carrot chips 1 lb. zucchini (smaller ones are best) 1 cup seasoned bread crumbs (Progresso) non-stick cooking spray (Pam butter flavor is best for this recipe, but any kind will work) 2 eggs 3 tbsp. water salt and pepper, to taste Preheat oven to 425°F. Slice zucchini diagonally into 1/4-inch slices. In a small bowl, beat eggs with water. Lightly salt and pepper egg mixture. Place bread crumbs in another small bowl. Spray a couple baking sheets with the non-stick cooking spray. Take each piece of veggie and dredge in egg, cover with bread crumbs on both sides and place on baking sheets. Before placing in oven, spray all the veggies lightly with the non-stick spray. Place the sheets with the zucchini in the oven for 5 minutes, then add the sheets with the carrots, so they will finish around the same time. They are done when well browned.
