HEALTHY BAKED ITALIAN ZUCCHINI
CASSEROLE
 
1 very large zucchini (about 3 cups sliced)
1 lb. ground beef
1 cup green peppers, chopped
1 cup onion, chopped
1 (15 oz.) can tomato sauce (Hunts)
1 tsp. oregano
1 tsp. Italian blend seasoning
1/2 tsp. basil
2 cups Italian blend shredded cheese

Preheat oven to 350°F.

Peel and core zucchini. Slice very thin and place in a 9x13-inch microwaveable dish. Pour about 1/4 cup water over and sprinkle with a couple dashes of salt. Cover with Saran or plastic wrap and cook in the microwave on high for 10 to 15 minutes until tender. Cool, and drain. Pat dry with paper towels to remove excess moisture.

While the zucchini is cooking, brown ground beef with green peppers and onions. Drain well. Add sauce and seasonings. Simmer about 10 minutes for flavors to blend and then pour over the zucchini. Top with 2 cups Italian blend cheese. Cool before serving.

Bake at 350°F for 20 to 30 minutes until bubbly and cheese is melted.

Note: Stores well in refrigerator and reheats well.
