FRENCH FRIED ONION POTATO FLUFF 
2 c. mashed cooked real potatoes
1 - 8 oz. pkg. cream cheese, softened
1 small onion, finely chopped or grated
2 eggs
2 tbsp. flour
salt and pepper
1 - 3 1/2 oz. can French fried onion rings

Peel, quarter and boil 4 medium potatoes until fork tender, drain. Put the potatoes in a large mixing bowl and mash while hot. Add cream cheese, onion, eggs and flour. Beat at medium speed with electric whipper until blended. Increase to high and beat until fluffy. Season with salt and pepper.

Spoon into a 9-inch square baking dish. Cover top with onion rings.

Bake uncovered in a preheated 300°F oven for 35 minutes. If potatoes are prepared ahead, do not add onion rings until ready to bake.

Serves 6-8.
