SPICED SWEET POTATOES WITH
APPLES AND RAISINS
 
1/2 c. raisins
1/4 c. water
1 tbsp. Grand Marnier
1 lb. sweet potatoes (about 3), peeled and cut crosswise into 1/3 inch slices
1 Granny Smith apple, cored, quartered, and cut into 1/4 inch slices
2 tbsp. unsalted butter or less
1/4 tsp. cinnamon
1/4 c. fresh orange juice
2 tbsp. unsalted butter

In a small bowl let the raisins soak in water combined with Grand Marnier for 20 minutes. In a steamer basket set over simmering water, steam the sweet potatoes, covered, for 15 to 20 minutes, or until they are just tender.

In a large skillet cook the apple in 2 Tbsp. butter over moderate heat, stirring, for 2 minutes. Stir in the cinnamon and orange juice; cook the apple, covered, for 5 minutes more. Stir in sweet potato, raisin mixture; salt to taste. Simmer mixture uncovered, for 3 minutes. Swirl in remaining butter.

Serves 4 to 6.
