SWEET POTATO AND APPLE STRATA 
8 lg. sweet potatoes, boiled, drained, peeled and cut 1/4 inch slices
4 lg. tart apples, peeled, quartered, cored and cut in 1/4 inch slices
3/4 c. packed brown sugar
1/2 c. butter
1 tbsp. grated orange peel
3/4 c. orange juice
1/3 c. maple syrup
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg

Preheat oven to 375 degrees. Lightly grease 9x13x2 inch baking dish. Alternate sweet potato and apple slices, slightly overlapping. Stir sugar and butter in small saucepan over medium heat until butter melts. Add remaining ingredients, bring to a boil, stirring until smooth. Pour evenly over potatoes and apples. Bake 40 minutes at 375 degrees or until potatoes and apples are tender and lightly glazed.

To make ahead, bake 20 minutes. Cover and refrigerate. Before serving, bake 20-25 minutes. Serves 12.
