“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

I made this recipe Gluten Free!! I substituted the flour for a gluten free all purpose flour, and the milk with Goat's milk. The pancakes are great! thanks.

GREAT recipe! Tasted just as good, if not better, than many recipes that call for eggs! YUM!

I would agree with the reviewer who suggested cutting the cinnamon level, however. These taste STRONGLY of cinnamon...a dash would do. ;)

 Christa (Virginia) replies:
Way too much cinnamon! The cinn overpowered the pancakes and no one at the breakfast table was able to finish because the flavor was too strong. Maybe cut it to 1/4 tsp or just leave it out. They weren't bad apart from that, however.

I have been looking for an eggless pancake recipe for quite sometime and I must say, this one is the best. I am a vegetarian and don't eat eggs. So this is exactly what I was looking for! Thanks a bunch, Dawn! You just made my day (and I say this as I finish the last of my 2 pancakes that I am having for breakfast today)

These were not bad, which surprised me for eggless pancakes. I would add a little bit of salt next time and less cinnamon.

They turned out really well! Instead of butter on the pan, we used oil, though and they didn't stick at all, smelled delicious, great idea!

Would applesauce work as a substitute for butter? Low cholesterol diet.

Hi Cindy,

I would try using 1/2 applesauce 1/2 vegetable oil; the texture might not be the same. Let us know how it turns out!

Absolutely delish!! I used almond milk instead and cut out the water to make them a little more vegetarian/vegan-friendly. My 2-year-old twins were running to the stove for more before I could get them off the pan! Thank you!!

Same here... I'm a newlywed and woke up wanting to fix breakfast for my husband. Pancakes, I thought... Except there were no eggs! Eggs usually bother his colitis anyway so I googled eggless pancake recipe just to see what would pop up and behold, your recipe for the best tasting whole wheat and wholesome pancakes ever! Thanks! They are a new family treat.
