OMELETTE 
6 eggs
2 potatoes, diced
1/2 lb. ham or chorizo (Spanish sausage)
1 sm. onion
1/2 green pepper
salt to taste

Fry potatoes. Beat eggs with fork, add ham or chorizo, salt, diced onions, green pepper, and fried potatoes. In large pan, low heat, oil bottom so it doesn't stick. Pour in mixture and cover. Cook for approximately 10 to 15 minutes. Serves 4.
