WESTERN OMELETTE 
2 eggs
1/2 c. milk
2 slices yellow American cheese
1 tsp. butter
Salt and pepper
1/2 green pepper, chopped
1/2 red pepper, chopped
1 slice ham, cubed

In a medium bowl, combine eggs, milk, peppers and ham; beat well. Put butter in skillet over a moderate heat. Pour eggs in skillet, let cook until lightly brown. Add cheese, cover the skillet and let cook for 30 to 60 seconds, then gently fold the omelette in half.
