WESTERN MAC CASSEROLE 
1 pkg. macaroni and cheese dinner
1 lb. ground beef
1/2 c. sliced celery
1/4 c. chopped green pepper
1/4 c. chopped onion
2 c. (1 lb. can) whole kernel corn, drained
1 (6 oz.) can tomato paste
1/2 c. water
Dash of pepper

Prepare dinner as directed on box. Brown meat, celery, green pepper and onion; cook until tender. Stir in corn, tomato paste, water, salt and pepper. Add prepared macaroni and cheese dinner. Mix well. Pour into 2 quart casserole. Bake at 350 degrees for 15 to 20 minutes.

Double this recipe and before baking, divide it into two or three casseroles and freeze all but one for a later meal. Saves time and energy.

I've been making this for over 35 years! I add some chili powder, garlic and some creole seasoning to spice it up a little. It's also good to add on some shredded cheddar cheese on top when baking.

I made this when my children were small, it was a major hit. I also added a good brand of chili beans with meat. The beans really amped it up. I had lost the recipe and thought l would Google to see if it came up... sure glad I did. I sometimes placed American cheese on top when time to bake.
