POTATO SALAD WITH CREAM CHEESE 
5 lb. white potatoes
1 (8 oz.) pkg. cream cheese, softened
8 small sweet gherkins, diced
1 medium onion, diced
1/2 small green pepper, diced (optional)
15 oz. Miracle Whip
4 tbsp. mayonnaise
1 tbsp. prepared mustard
1 level tsp. salt
1/2 cup sweet gherkin juice

Boil potatoes. Peel and dice after cooling off.

Put cream cheese in microwave in covered dish for 1 minute and 30 seconds. Put immediately in potatoes.

Dice the gherkins, onion and pepper (if using) and add to mix. Mix in Miracle Whip, mayonnaise and mustard. Add salt and sweet gherkin juice, to taste.

Chill in refrigerator before serving.
